Recipe: Butter Bean Salad

This butter bean salad is a quick and easy way to have a nutritious and healthy meal.

Butter beans contain significant amounts of fiber. The high fiber, potassium, vitamin C, and vitamin B-6 content in white beans all help to promote heart health.The iron, phosphate, calcium, magnesium, manganese, zinc, and vitamin K in white beans all contribute to building and maintaining bone structure and strength.

Plum tomatoes are a good source of potassium, manganese, magnesium, phosphorous, and copper. They also have dietary fiber and protein, as well as many organic compounds like lycopene that also contribute to the overall health benefits of
tomatoes. Basil is said to boost the immune system, protect the liver, reduce fever and pain,

Red onions contain fiber and folic acid, a B vitamin that helps the body make healthy new cells. Onions are healthy whether they’re raw or cooked, though raw onions have higher levels of the compounds that provide health benefits.

Ingredients (serves 2)

  • 1 500g can of butter beans
  • Plum tomatoes
  • Basil
  • 1⁄2 a small red onion
  • Juice of half a lemon
  • 1 tablespoon of olive oil
  • 1 teaspoon of sumac
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Method

  1. Chop the tomatoes and onions to small chunks
  2. Roughly chop the basil
  3. Drain and wash the butter beans
  4. Add all the ingredients to a bowl, and all seasoning and mix till all combined
